Anne Cahoon's Chowder
 

WHATYA NEED :

Five large PEI potatoes, 1 large onion, 1 lb. of fresh pork bellies, salt and pepper, a couple a cups of water

WHATYA DO:

- slice up the onion and cook with pork bellies in cast iron frying pan until pork is browned.. DO NOT REMOVE THE FAT!

- peel and slice the potatoes

- add the potatoes to the frying pan and cover with water, add salt and pepper

- cover and simmer over low heat until the potatoes are soft and mushy and the water is milky

- scoop onto on a large dinner plate top with generous helping of ketchup and giv'er...yummy!

- makes two six-fingered servings
